Berry Sweet Potato Bowl

This comforting and delicious bowl is the perfect start to the day! A hefty dose of fiber from sweet potatoes, berries and nuts is good for the GI system and will help keep you full all morning. Almond butter supplies healthy fats and protein. And sweet potato is a complex carbohydrate that provides sustained energy.

Berry Sweet Potato Breakfast Bowl

Sweet potatoes topped with almond butter and berries

  • 1 medium baked sweet potato
  • 2-3 Tbsp almond milk, unsweetened can substitute, soy, coconut or skim milk
  • 2 Tbsp almond butter
  • 1/2 cup fresh or frozen blueberries (thawed) or fruit of choice – raspberries, diced apples, banana
  • 2 Tbsp chopped almonds or cashews, pecans, macadamia's
  • 1 tsp honey, if needed


  • For a single serving, peel a sweet potato and cut it into chunks in a microwave-safe bowl.
  • Add milk and microwave for 1 minute, until warmed through and softened.
  • Using the back of a fork, mash sweet potato-milk mixture until it is relatively smooth, adding a drizzle of honey, if desired.
  • Spoon almond butter over sweet potato mixture.
  • Top with blueberries (or other fruit).
  • Sprinkle with chopped almonds and cinnamon. Enjoy!
